How to whip up this radish cucumber salad in 15 minutes
One thing I love about this salad is that you’ve got options. I love how pretty the thinly sliced veg looks, but if you want to lean into crunch, you could quarter the radishes and dice the cucumber!
Feel free to use different herbs here…I recommend a ratio of 50:50 flavourful to neutral herbs
Pssst…I’ll put on my dietitian hat to remind you that fresh herbs aren’t just flavourful, they’re actually packed with antioxidant phytochemicals too! Don’t be stingy.
You don’t need a mandolin for this salad but it makes the slicing quicker! Always use a slicing guard.Because it’s gluten free, low FODMAP and nut free, this is a great salad for picnics or having people over.
A note about seasoning: when I was testing this recipe, I tried salting the radishes first which was SO delicious but honestly, I really missed the crispness. All about that balance, am I right??
The fix? I decreased the sugar in my lemon dijon dressing to make it tangier. Dress the salad right before serving and be generous!

8inch pieceEnglish cucumberor 2-3 Persian cucumbers
1cupflat leaf parsleyfinely chopped
½cupfresh mint leavesfinely chopped
½cupfresh dillfronds and tender stems, finely chopped

2tablespoonssalted sunflower seedsoptional, for extra crunch!

Instructions
Trim and thinly slice the radishes and cucumber with a knife or a mandolin. The thinner you slice, the less crunchy the salad will be.
Place the cucumber and radish in a serving bowl with the fresh herbs and toss. Sprinkle with sunflower seeds, if using.
Drizzle generously with dressing right before serving so the salad doesn’t go soggy, or serve dressing on the side.
Notes
Low FODMAP note: ½ cup of English cucumber, or a half of a Persian cucumber, is low FODMAP. So if you use an English cucumber and stick to a ¼ serve, this salad is low FODMAP!
